This is a most flavorsome low-fat, high-protein dish, and even though the quantities below are for a generous 1 serving (or ¾-1 serving for a WLS patient), it can be easily doubled, tripled or more for a larger gathering.

Ingredients

- 1 tsp garlic puree
- 1 tsp chopped fresh rosemary
- 100g/4 oz turkey steak
- 1 tomato, chopped
- 1 spring onion/scallion, chopped
- a little diced cucumber
- 1 tsp sweet chili sauce
- 1 tsp lime juice
- 2 tsp chopped fresh coriander/cilantro
- salt and freshly ground black pepper
- low-fat cooking spray
Directions
1. Mix the garlic with the rosemary and use to coat the turkey steak. Leave to marinate for 30 minutes.
2. Meanwhile, to make the salsa, mix the tomato with the spring onion/scallion, cucumber, chili sauce, lime juice, coriander/cilantro and salt and pepper to taste.
3. Preheat a griddle until smoking hot. Spritz the turkey with the low-fat cooking spray, then griddle for 8-10 minutes over a medium heat, or until cooked. Serve with the prepared salsa.
