Here is a really good muesli base that you can vary by topping with different fruits. The mixture is baked to make it really crunchy and will remind you to take your time and chew very carefully over breakfast. Try it plain with a little milk or natural yogurt or top with seasonal fruits like berries, sliced banana or stewed apple.

Ingredients

- 50g/1 cup wheat bran flakes
- 150g/5 oz rolled porridge oats
- 25g/1 oz All Bran
- 2 tbsp groundnut or rapeseed/canola oil
- 250g/ 9 oz trail mix (a mix of nuts, dried fruits and seeds
- without added sugar)
Directions
1. Preheat the oven to 200 C/ 400 F/gas mark 6.
2. Mix the wheat ban flakes with the porridge oats, All Bran and oil. Spread evenly onto a baking tray.
3. Bake for 10-12 minutes, checking frequently and stirring if necessary to prevent burning.
4. Remove from the oven, add the trail mix and stir well to combine. Spread evenly again and bake for a further 5 minutes.
5. Remove from the oven and allow to cool completely before storing in an airtight container. Serve with milk, yogurt or fruit as liked.
